Back from a creative hiatus, with lots of eats, a little shopping, and one very exciting update

Hi friends! I'm back after a short creative hiatus — I needed a little space to figure out how to blend both the blog and my new podcast (stay tuned!) in a way that felt authentic, sustainable, and inspiring. The good news? I cracked the code, and we’re back to posting three times a week here on The Amaranthine Collective. I’ve missed it — and you — so much.

This week was a bit of a gray, rainy slog weather-wise (anyone else losing their patience with spring?), but I did manage to squeeze in some serious food and self-care highlights — plus a little shopping adventure and a big moment I’m so excited to share.

8282 (Again, and Worth It)

I started the week strong with a trip to 8282, one of my all-time favorite Lower East Side spots. I know I’ve mentioned it before, but it’s one of those places that deserves multiple shoutouts. It’s a cozy, tucked-away gem serving upscale modern Korean cuisine — and I swear it gets better every time.
The owner (manager?) remembered me from about a month ago which always makes a spot feel extra special. Do not miss the soy-glazed seabass — I’ve ordered it both times I’ve been, and I’d go back for that alone. The scallops and the perilla oil mains are beautifully presented and genuinely next-level delicious.

Self-Care at Hortūs

After a full clinic week, I treated myself to a little Friday night ritual — a signature pedicure at Hortūs. It’s a serene little LES oasis with a chic vibe and consistently excellent service. I’ve said it before and I’ll say it again: nothing hits like a solo self-care night to kick off the weekend.

East Village Night Out

Saturday, I stayed downtown, but ventured a little east for dinner at Soothr, a spot that’s been on my list for a while — and it did not disappoint. Think elevated Thai comfort food, in a warm, bustling space. Highly recommend a reservation — it was packed.
Highlights: the Jeeb dumplings (so good), the Panang Duck Lychee Curry, and the Chicken Kao Soi — I’m still thinking about that broth.
Afterward, we went to Sake Bar Decibel — a little slice of Tokyo underground bar energy right in the East Village. The setting was fantastic, the sake selection was excellent, but I will say the staff was... brisk. They were clearly trying to turn over tables quickly, even if your drink wasn’t quite finished. Still, I’d go back — just maybe on a less crowded night.
We ended at Rhymer’s Club, a vibey little bar nearby with an inventive cocktail list. I had a sip of the Crazy Jane and I’ll definitely be back for a full one next time.

Woodbury Outlet Run

To close out the week, I escaped the city with a friend and made the pilgrimage to Woodbury Premium Outlets. They’re about an hour from Manhattan (we drove, but there are bus options too). And honestly? Worth it. The best outlets I’ve ever been to. I didn’t go too wild, but left with a few solid pieces — trying to be intentional about shopping for quality, versatile staples these days.

Here’s to hoping April showers really do bring May flowers, because NYC could use a mood boost — and a little sun wouldn’t hurt either.
